What you'll actually do
- 01Walk the dining room looking calm while mentally tracking six problems at once
- 02Jump in and greet VIP guests like you've been waiting for them all evening
- 03Handle reservation conflicts when the host triple-booked the best table
- 04Manage server sections and cut floor staff when the night slows down
- 05Deal with the customer who found a hair in their food (it's always a hair)
- 06Coordinate with the kitchen on timing for large parties and coursed dinners
- 07Process end-of-night reports and reconcile the evening's sales
