What you'll actually do
- 01Train new servers who don't know the difference between a salad fork and a dinner fork
- 02Take the most difficult tables because 'you're so good with people'
- 03Run pre-shift meetings and brief the team on specials, 86'd items, and VIP reservations
- 04Manage the seating chart so no section gets slammed while another server leans on the POS
- 05Handle customer complaints that escalate beyond the normal server pay grade
- 06Coordinate with the kitchen on timing, coursing, and the inevitable allergy curveball
- 07Close out the night, tip out support staff, and reconcile the checks
